Where can I eat delicious Quesadillas?
@Bonita Restaurant (near 3rd circle). It’s a Spanish ‘n’ Mexican restaurant with ample options and it’s the best place for cozy dining during winter season :)
Where can I find a cool bar with a western vibe?
Alright, in general it'll be very difficult to find a place in Amman where people won't stare at you if your displaying PDA. However some of the most laid back bars in terms of people and in this order - @Amigo Pub @The Corner's Pub @Bonita Restaurant and possibly @Maestro Restaurant and Bar just because a lot of expats frequent it so they're used to that.
Where can I enjoy a holiday feast?
I know it may seem strange but if you go to @Bonita Restaurant this month they've got a holiday dinner every Sunday with turkey, christmas salad and some super delicious dessert.
Where can I find out what the 'it' pub on a Wednesday night is?
@The Corner's Pub has been consistently getting better and because its a neighborhood bar to so many of my friends I feel it would be one of my first choices on a Wednesday night. You also have the classic choice for weeknights in general which is @Bonita Restaurant. Both of these places are clearly a more laid back option compared to OTR.

Go to @The Corner's Pub or @Bonita Restaurant the weeknights there are pretty chilled out and you're bound to bump into some cool people.

It really all depends on the music you're looking for but based on the places you've suggested in your question I'm guessing a place like @Good Pub would be something you'd like. Personally I would go for bars like @Bonita Restaurant
Where can I eat the best appetizers?
@Bonita Restaurant their food in general is great but their appetizers menu is awesome! the chicken tenders are amazing and it comes in a large portion with an incredible dipping sauce, the garlic shrimp is delicious so is their chicken quesadilla... all their appetizers are great!
