@Al Qasr Metropole Hotel - smaller than the usual big name hotels but houses some of the best restaurants in Amman with Vinaigrette.

Where can I stay in a hotel with excellent service and spacious rooms?

Alqasr Metropole Hotel - 4 Star, recently refurbished, wonderful service, and great value for money. I'm not sure if the rooms are quite as spacious as you'd like but they're comfortable enough and very clean. The location isn't ideal but several of the best restaurants in Amman are located in the Alqasr Metropole (Howard Johnsons I believe).
